The cooled trays then move onto a sieve, which is a metal screen vibrating to filter excess starch from the candy. From here, the candy pieces move on the conveyor belt for decoration and packaging in specified packages.

Gelatin

The process of making gelatin begins with the raw ingredients. They are dried and pressed into sheets by machines. These sheets are then processed with grinders to make them into a fine powder. The finished product may also include other additives, such as food colouring, flavouring, or emulsifiers. After these steps are completed, the gelatin is cooled and packaged for further processing. Gelatin is then ready for consumption.

The process begins with a mixture of agar-agar powder (II) and locust bean gum. This mixture is mixed dry at a rate of one to nine kilograms per hour. At the initial gel strength, 850 grams per cubic centimeter, the moisture content is 16%. The agar-agar powder is then fed through the die plate with a feed rate of 80 kg per hour and a pressure of 80 bars. The product is then pulverized and stored at room temperature for 4 hours. At a temperature of 80 degrees Celsius, the product dissolves instantly.

Gelatin molding process

The gelatin molding process consists of impregnating a permeable support with a chemically unreacted gelatin solution and a halogen free polyfunctional organic polymer. This combines the two polymers and gives the resulting composite a moisture content ranging from 12% to 40%. The gel is then molded at high temperatures and pressures to produce the desired structure. During the molding process, the gelatin is heated to a temperature of 100° to 160° C. and pressures up to 1500 p.s.i.
