How is Gummy Made in Factories?

To make gummy candy, manufacturers need three main ingredients: Pectin, starch, and gelatine. These three ingredients determine the cost of the candy. After you have determined how much of each ingredient is used in making the gummy candy, you can determine its cost. Next, you need to determine the quality of the gummy candy by testing a sample in a quality control laboratory. Then, you can begin production by pumping the mixture through a mixing tank and pumping it to a molding machine or station. The molding machine will mix the molten batch with starch to help hold it together while drying, setting, and cooling.


Almost half of all gelatine that is produced worldwide is used to make gummy candies. Gummy bears contain almost a quarter of this substance, which is a byproduct of the meat industry. But the process of making gummy bears is far from gastronomic. For starters, gelatine is odorless and almost tasteless, meaning that it can’t be detected.

The process for making gummy candies begins with the evaluation of incoming raw materials. Each ingredient is thoroughly tested in a quality control lab before it is used in the production process. The ingredients are tested for their appearance, color, odor, taste, and viscosity. Additionally, they are tested for pH levels and particle size of solids and liquids. By undergoing rigorous quality control tests, manufacturers can make sure that the ingredients used in their candy are up to standards and produce a high-quality product.


The production of gummy candies involves several stages. During the manufacturing process, pectin is added to the mixture in order to give the product a soft viscous body. The process also involves a quick flavor release, a clean cut texture and a shiny appearance. Pectin is a plant-based ingredient that delivers on the aesthetic preferences of consumers. Manufacturers can use pectin to reduce sugar content and make gummies that are healthy and low in calories.

To produce gummies with pectin, the sugar is heated to a temperature of 220-240 degF. The temperature below this range will result in a pate de fruit texture, while the higher the temperature, the stiffer the texture will be. The addition of citric acid is recommended as late as possible to avoid altering the texture of the candy. If you use a pectin pre-solution, then the pectin will work well.


In factories, gummy candy is produced from starch. This substance is used in a mold to form gummy candy. Starch is added to a special ingredient known as a polymer. The ingredients in the mould form a gummy, which is then cooled by a conveyor belt. The batch moves to the next segment of the production line, called a starch buck. A vibrating metal screen scrubs the gummy candy of any excess starch. Once the gummy candy is finished, it is transferred to a conveyor belt to reach the next segment.

Gummy candy is produced using high-amylose corn starch, a hybrid variety of corn that produces a thicker gel than other types of starch. The starch has a faster setting time, and it also requires higher temperatures to be made into a gel. High-amylose corn starch is used for cold-extruded candy, such as marshmallows. Because starch is so thick, it cannot be dissolved in water.

Cost of production

The process of making gummy candy involves several steps. First, a batch is pumped into a starch molding machine, or Mogul. This machine does multiple tasks, such as melting the gelatin and sugar, filling moulds, and fusing the finished product. Next, the trays are sent through a conveyor belt into the final assembly, or starch buck. After this step, the trays move to a sieve to remove excess starch. Then, the trays move to a mould impression and filling area, where a fluid composition is injected into the moulded product.

To make the gelatin gummies, a new technique was developed by Gelita, Hansel, and WDS. The combination of these technologies reduces the production time by up to 50%. Instead of lengthy drying times in a tray, the new process allows the gummies to be formed in reusable silicone moulds. While this method requires hundreds of moulds, it minimizes labour and production space costs.

Safety of manufacturing process

The manufacturing process of gummy candies involves the introduction of functional ingredients into a liquid medium such as water or oil. These ingredients undergo tests in a QC lab to ensure their quality. Sensory characteristics such as color, odor, taste, particle size, viscosity of oils, and pH level are also evaluated. These tests are important to the manufacturing process, as they allow manufacturers to produce high-quality gummy candies.

Once the ingredients are mixed and the gummy mixture is prepared, the manufacturer pumps the mixture through a starch molding machine called Mogul. The mogul performs several tasks in the manufacturing process. First, it cools down trays that contain the ingredients. Then, it sends them through a conveyor belt to the final assembly, or starch buck. Next, these cooled trays are emptied into a sieve, a vibrating metal screen, which filters out any excess starch. After this step, the finished candy moves along a conveyor belt where it is decorated. Finally, the candy is packaged in specified packaging.
